Tsikoudia: The Spirit That Defines Cretan Culture and Community

Tsikoudia, also known as raki, is Crete's traditional grape pomace spirit and a cornerstone of local culture. Produced after the autumn harvest, grape skins and stems are fermented and then distilled in copper cauldrons called kazania. The process is a communal event, with families and neighbors gathering at distilleries across the island, particularly from October through December. For visitors, tsikoudia is more than a drink: it is offered free at the end of almost every meal in Cretan tavernas as a gesture of hospitality, often accompanied by small sweets. Tasting it is considered a cultural exchange. Distillation events are open and welcoming to outsiders, especially in rural villages in the Heraklion, Rethymno, and Chania regions. If visiting in autumn, look for the smoke rising from village kazania as an invitation to witness this living tradition firsthand.
